Delicious, and you don’t even have to cook anything! Just make sure to sharpen your knives before diving into this one, because it’s a bit of a wrist workout. Oh and don’t use ground beef – bleah.
1/2 lb raw lean beef (e.g., top round or bottom round)
1 egg yolk
1 Tbsp cornichons, diced or sliced thin
1 Tbsp capers
1/2 shallot, minced
1 Tbsp mustard
Sprinkle salt liberally all over the beef, and let it sit uncovered in the fridge for about 30-45 minutes. Then hand chop the beef
Mix the chopped beef with extra virgin olive oil and salt and pepper to taste. Arrange on the plate, topped with egg yolk, and
with the rest of the ingredients on the side. Tableside, mix everything together with two forks, and enjoy.
